Head barista for the Double Dutch Café in Simpson Bay, St Maarten, with 3 baristas in the coffee team tasked with staffing the cafe 7 days a week from 7 AM to 5 PM.

Mission is to make the best coffee available on St Maarten.

Responsible for:

  • creation of coffee menu
  • coffee recipes and its cost calculation $/cup
  • water supply and selection and quality
  • milk selection for milk-based coffees
  • espresso bean selection from local or oversea suppliers
  • contact with coffee bean suppliers
  • weekly calibration of espresso machine to make 50 gr double shot
  • weekly calibration of grinders for black and milk-based coffees for 25 sec brew time
  • cleaning schedule for equipment
  • establishing Third Wave Coffee rules and guidelines for making coffee and educating personnel
